The Eagles beat their Italian opponents 3-0 at Selhurst Park to edge closer to the semi-finals, with Mitchell’s 31st minute strike from close range sandwiched between a Jean-Philippe Mateta penalty and a late Ismaila Sarr header.
“I'm just happy and glad to get my second one,” said Mitchell. "In the wing-back position, as you see on the other side [with Daniel Munoz], you’ve got to attack the space, you’ve got to support attacks. That's something I've been working on, and I'm glad it worked.
“I try to be at the back post or cut back whenever Dani Munoz or Isma Sarr have the ball. I'm just happy that I was in the right position against Fiorentina and I was able to score, but we know we could have scored more – there were chances.
“But at the same time, they could have scored. With every game, you know that teams are going to have spells, so we had to ride that spell.
“We know how good we are on the break and in possession, like you saw in the first half. We knew that if we kept going and didn't concede, we had a chance of scoring. We're grateful for the 3-0 win.”
While Mitchell and his teammates now switch their focus to their Premier League clash against Newcastle United on Sunday, they can be forgiven for having one eye on the second leg in Florence next week.
But Mitchell will not think that far ahead: “We're humble. We know that it's just halfway. We know how dangerous they are.
“We know that we're going to their ground and they're going to be up for it. We just have to match them, hopefully keep a clean sheet and win the game.
“This win tonight gives us confidence, and these are the type of games we want to play, the type of competitions you want to be in, so being able to show how good we are is just a good feeling.
“There have been certain games (in Europe) where we haven't done what we wanted to do or needed to do at times, but we know how good we are. We know what we're capable of, and happy that it came off today. It's always good to show what you've been doing on the training pitch.
“We went on a decent run last year, and we're capable of going on good runs, that we're hard to beat. That’s what we try to show every day on the training pitch and in games.
“Goals win games and we want to score as many as we can. We had a few chances that we kind of missed or it didn't come off, but we're capable of scoring in every game, and I'm happy that Isma was able to seal it off with a goal at the end.
“As the gaffer says, it's only halfway through, so we need to replicate that in Italy. As professionals, as ourselves, we know to be humble, because it can always be a different scenario. We know what we need to do, and that's the aim.”
