Promoted to the Select Group referees list in August 2021, the Australian official was the man in the middle for three of United's Premier League fixtures last season.
The 39-year-old oversaw Newcastle's 3-1 win against West Ham United in May and booked four players that afternoon at St. James' Park, including Magpies defender Lewis Hall.
The FIFA-listed official also took charge of United's 2-0 home defeat against Villa in January and handed out three yellow cards, booking Joelinton.
The Queensland-born whistler was the man in the middle for the Magpies' 2-1 loss against Arsenal in September 2025 and brandished three yellow cards, booking Joelinton and Dan Burn.
Gillett became the first person born outside of the British Isles to referee a Premier League game after overseeing Newcastle's 1–1 draw away at Watford during the 2021/22 season.
